Chocolate Beet and Banana Chia Pudding



While this smooth chocolate pudding may taste decadent, it’s actually super good for you! Chia seeds pack a powerful punch of health benefits, including B vitamins, fibre, and omega-3 fatty acids, taking this scrumptious dessert from guilty pleasure to brain food. 


Beets are one of the few foods that contain heart-healthy nitrates, which help to increase your blood flow. Beetroot powder is a great way to add heart-healthy foods into your diet, as the concentrated powder retains the nitrates from the original vegetable - so you can get even more in a smaller format! 

Almond milk and maple syrup to sweeten keep this dessert dairy-free and refined sugar free while adding healthy fats, calcium, and vitamins - did you know that one serving of almond milk contains 50% of the daily recommended intake of vitamin E?


And of course, adding in your own cannabutter or cannabis infused oil (see our guide on how to make your own here!) infuses every bite of this dish. If you’re looking for a powerful anti-inflammatory and nutritionally dense meal, well... why not dessert? 


Ingredients:

  • 1c almond milk

  • 3T maple syrup

  • 1/2 tsp canna-oil or canna butter

  • 1 tsp vanilla

  • 6T chia seeds

  • 1/8 tsp salt

  • 2T cocoa

  • 2 tsp beet powder

Directions:

  1. Pour 1/2c almond milk into high speed blender. Add maple syrup, canna-oil or canna butter and chia seeds.

  2. Turn on high until seeds are broken up.

  3. Add other 1/2c almond milk, cocoa, beet, salt and vanilla.

  4. Scrape down sides of blender and spin again until smooth. Layer into a dish with bananas in between, and put in fridge to firm up. Enjoy!
